It owes its name to its beautiful colour reminiscent of harvested wheat and golden straw. Chaumes is a cheese full of character, slowly matured over time. Like the sun on the harvest, it reveals in its golden rind, a rich aroma and intense flavour. Chaumes is a rich cheese which smells deliciously of rustic land; its rind is washed and brushed during the maturation process to develop its ferments.
