Camembert cheese is a type of cheese made from raw, unpasteurized cow's milk. The milk is fermented to curdle and when the curds are young, they will be caked carefully and skillfully. These curd cakes will be left for a while, and returned over and over again. It is this step that makes the cheese soft. The molds Penicillium Candida and Penicillium Camembert are then inoculated to ripen these soft cheeses in a few weeks. These molds also give the cheese a hard white outer shell while the inside remains soft.
