It is a PDO cheese made from raw partially skimmed cow's milk with 31% fat on the finished product.It is part of the cooked pressed cheese family. The scents of Comté are classified into 6 aromatic families: - Lactic, Fruity ,Roasted, Animal, Plant, Spices.
